Air Fryer Roasted Beets

Roasted beets are one of my favorite vegetable dishes. Their complex, sweet, and earthy flavor is delicious in any season, and they can be pureed into a delicious bean-free hummus. Unfortunately, roasted beets take a long time to cook in the oven, which is why this air fryer roasted beets recipe was such a breakthrough for me. It takes less than half the time, and the results are just as delicious!

This Is The Best Way To Roast Beets!

Roasting beets in the oven never quite worked for me. I’m the only one in my family who enjoys their flavor, so I don’t buy more than one bunch at a time. And they take forever to get fork tender in the oven! Even when I diced them, they’d take 40 minutes minimum. I don’t have that much time to cook something just for myself these days.

This is why air fryer roasted beets are such a revelation. It cuts the cook time by more than half, and the results are just as delicious…maybe even better. I’ll let you be the judge!

What’s The Best Air Fryer?

I have only ever owned and used one air fryer, which is the Phillips XXL. I love this machine! It’s consistent, easy to use, and large enough that I don’t have to cook in batches. The basket is big enough that I can roast a whole chicken in it, which is why I chose this particular size. The best part: the entire basket assembly is dishwasher-safe, so cleanup is minimal.

The size that attracted me to this particular air fryer unfortunately also its biggest drawback. At over 12 inches tall and 11 inches deep, it’s a beast. If you’re thinking of being one, I recommend measuring your cabinets and counter space before purchasing to make sure you have room.

Variations

The printable recipe below is the plain version so you can use your air fryer roasted beets in many different ways after you cook them. You can also add herbs and spices before the cooking process for specific uses. Some of my favorite ways to season them are:

  • After cooking, toss with 1 tbsp lemon juice and 1 tsp lemon zest
  • Prior to cooking, add the leaves from 2 sprigs of thyme prior 
  • Before air frying, add 4 medium garlic cloves, thinly sliced
  • After cooking, toss with 2 tbsp of minced fresh herbs such as parsley, tarragon, or oregano

How To Serve Air Fryer Roasted Beets

These sweet and earthy roasted beets are delicious as a hot side either by themselves or with roasted butternut or delicate squash. They also serve as a flavorful base or addition to salads. I like tontoss mine with goat cheese, pine nuts, and balsamic vinegar and enjoy them alone or with lettuce.

How To Cook Beets In The Air Fryer

INGREDIENTS

  • 1 1/2 lb fresh beets
  • 1/2 tbsp EVOO
  • 1/2 tsp Kosher salt
  • 1 tsp fresh thyme leaves (optional)

EQUIPMENT

  • Bowl
  • Wooden spoon
  • Vegetable peeler
  • Chef’s knife
  • Measuring spoons
  • Air fryer

METHOD

  1. While I love beets’ earthy flavor, there’s no need to make them taste like actual dirt. So wash ‘em well and be sure to scrub off any caked-on soil.
  2. Trim the leaves as close as you can to the beetroot…but don’t throw them away! Beet greens are delicious when sautéed with a little olive oil and garlic. They taste like (wait for it!) beets, albeit a milder version with a slightly bitter bite.

3. Use a veggie peeler to peel the skin from the beets. Beet juice does stain, so be sure to move any light-colored dish towels, fabric napkins, or anything else that could accidentally be ruined.

4. Cut the beets into 1/2 inch dice, discarding the long root-like part at the very bottom. I like to do this by cutting horizontally across the beet parallel to where they sprout, then stacking the slices before dicing. This cuts down on time and also ensures you’ve diced them evenly.

5. Place the peeled, diced beets in a bowl. Add salt and thyme if desired, drizzle with olive oil, and toss to coat.

6. Empty the contents of the bowl into the air fryer and cook at 400 degrees for 18-20 minutes until tender. Serve immediately, or place them in an airtight container and refrigerate. They’ll keep for up to 7 days.

Ingredients

Scale
  • 1 1/2 lb fresh beets, trimmed, peeled, and cut into 1/2” dice
  • 1/2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme leaves (optional)
  • 1/2 tsp Kosher salt

Instructions

  1. Place the beets into a bowl and toss with salt, olive oil, and thyme leaves if desired. Make sure the diced beets are well and evenly coated.
  2. Place the beets into the basket of the air fryer and cook at 400 degrees for 18-20 minutes until tender. Serve immediately, or store in an airtight container in the refrigerator for up to 7 days.
