I have a full-blown peanut butter addiction. Before I figured out that peanuts were contributing to my migraines, I was known to eat it by the ooey gooey spoonful. Now, I limit my consumption to a serving a day, eaten only during the one week of the month I’m certain I won’t get a migraine. And where’s the fun in that?
I decided to make that single serving more nutritious and enjoyable, and thus my no bake Peanut Butter Protein Bites were born! With skin- and gut-loving collagen, the natural sweetness of raw honey, and a crunchy coating of chopped nuts, these healthy snacks are a satisfying, nourishing treat!
The collagen : peanut butter ratio is the glue that binds these protein balls, so I don’t suggest playing with those two ingredients. What you could do instead is add to their texture by mixing in:
And vegans, you can also sub maple syrup for the honey on a 1:1 basis. There’s no need to compromise your values to experience this deliciousness! No Bake Peanut Butter Protein Bites
These quick and easy, protein-rich snacks will satisfy even the most intense peanut butter craving! Enjoy by themselves, or on top of your favorite bowl or smoothie
- Prep Time: 5 Minutes
- Cook Time: 30 Minutes
- Total Time: 35 Minutes
- Yield: 12 1x
- 1/2c peanut butter
- 1/4c raw honey
- 2 scoops collagen peptides
- 3 1/2 tbs raw peanuts, chopped
- Mix the first three ingredients in a bowl until the collagen dissolves and the ingredients are combined.
- Roll into 1 tbsp balls, then roll in the chopped peanuts.
- Place on a cookie sheet or plate and refrigerate for 30 min before enjoying. Store in the fridge for up to a week in an airtight container.
