
When I was a little girl, there was a restaurant called The Lamplighter near my house that had the BEST pasta alfredo. (At least according to my 6-year-old palate!) I will never forget that rich and creamy sauce, or the overstuffed feeling in the pit of the stomach I’d go to bed with after eating it.
While I’m by no means afraid of a little fat, it’s definitely possible to have too much of a good thing. And when it comes to me and dairy, that old cliché is twice as true. Never one to settle for feeling less than spectacular, I came up with a rich and creamy, dairy-free, Vegan Alfredo Sauce that has all the flavor minus the tummy troubles.

Ingredients
Vegan cream cheese is the star ingredient for my Vegan Alfredo Sauce. It creates that richness that makes the noodles feel like they’re coated in silk. I prefer nut-based vegan cream cheeses, and Kite Hill makes my favorite one. If you’ve never tried their Everything Cream Cheese, walk don’t run to your nearest Whole Foods! I love it on bagels, as a dip for crackers, and melted in sauces like this one. Pro tip: stock up when it goes on sale and keep it in the freezer until you’re ready to cook with it.
As with many dairy-free condiments, this Vegan Alfredo Sauce relies on nutritional yeast for its cheesy flavor. If this ingredient is new to you, don’t be put off by the name. This is by no means the same stuff that makes bread rise, nor will your sauce end up tasting like sourdough! Nutritional Yeast is actually a deactivated yeast that’s rich in B vitamins, and sometimes further fortified with B2. You can find it at Trader Joe’s and most natural food stores.

Serving Suggestions
Toss this Vegan Alfredo Sauce with your favorite pasta to enjoy it the old fashioned way, or try:
- Stirring it into cooked peas and carrots for a creamy, herbaceous side
- Whisking it into your morning eggs
- Drizzling it onto a salmon filet
- Using it as a sauce for roasted asparagus, cauliflower, or broccoli
- Substituting it for béchamel sauce when making Vegan lasagna

- 4 oz Kite Hill Everything Cream Cheese
- 1c almond milk
- 1/4c vegan yogurt

- 2 tbsp lemon juice
- 2 tsp fresh garlic, minced
- 1/2 tsp salt
Instructions
- Sauté garlic in oil over medium heat until fragrant
- Reduce heat to low and add cream cheese. When it starts to melt, add all the remaining ingredients and whisk until smooth.
- Toss with pasta and enjoy!
