This no-cook, date-sweetened caramel
1/4 c cashew butter
1/4 c maple syrup
2 tbsp coconut oil, melted
2 dried Medjool dates, pitted
1 tsp vanilla extract
Place all of the ingredients into the bowl of a blender or food processor and process. Stop periodically to scrape the sides with a spatula and check for chunks of date that may have gotten stuck beneath the blades.
Serve immediately, or store in an airtight container in the refrigerator for up to a month.
